Provenance: Central Irpinia. The vineyards are all situated in the area included in the Taurus wine-growing guide, on hillsides with good exposure and particularly suitalble soil for wine growing.
Training System: Guyot.
Density: 3,000/Hectare.
Yield: 55 quintals/Hectare.
Vinification and Maturing: Maceration with the skins, slow even temperature fermentation, using only native yeasts. Aging happens in oak casks.
Refinement: in bottles for 6 months.
Production: 5,500 bottles annually
Alcohol: 14%
Organoleptic Characteristics: Ruby red color tending toward orange-brown with aging. Rich and intense bouquet with hints of wild berries. Round taste, slightly astringent.
Serve with: red meat, spicy sauces, dry cheeses and hearty foods.
