Organoleptic Notes

Straw yellow colour with greenish reflections; intense persistent bouquet with delicate floral notes such as broom and Mediterranean flowers; dry, fresh, soft palate with hints of hazelnuts.

Winemaking

Vinification
Cold soak for 12 hours at 10 °C then slow pressing and fermentation for 15 days at 18 °C in steel tanks
Aging
Bottled in the spring following harvest and rested 2–3 months in bottle
