Organoleptic Notes

The wine shows a garnet‑ruby colour typical of Gaglioppo. Aromas of dark fruits mingle with dried herbs, dried flowers and earthy notes alongside hints of mushroom and leather. On the palate it is juicy and elegant with flavours of blueberries, black cherries and blackcurrant. Distinctive tannins are firm yet integrated, giving a dynamic structure that pairs well with rich dishes.

Winemaking

Vinification
Spontaneous fermentation of hand‑harvested Gaglioppo grapes from 40‑year‑old vines. Fermentation is carried out without the addition of cultured yeasts to express the terroir. The wine remains on the skins long enough to extract colour and tannins before pressing.
Aging
Aged briefly in tank (from harvest through the first week of October) to preserve freshness. Bottling is unfiltered to maintain natural character.
