Organoleptic Notes

Bright straw yellow colour with hints of pear, peach and citrus and lively acidity; fruit tones remain in the background with a slightly bitter almond aftertaste and great minerality.

Winemaking

Vinification
12‑hour cold soak at 10 °C followed by slow pressing and a 15‑day fermentation at 18 °C in steel tanks
Aging
Bottled in spring following harvest and rested 2–3 months in bottle
