Organoleptic Notes

Deep ruby color. The bouquet opens with dark notes of violet, Marasca cherry, prune and cinchona followed by tomato leaf, sandalwood and hints of humus. On the palate it is distinctly fresh and saline with elegant earthy and smoky nuances that give breadth and complexity.

Winemaking

Vinification
Spontaneous fermentation with indigenous yeasts and no temperature control. Maceration on the skins for about 40 days with daily remontage. After primary fermentation the wine rests on the lees in stainless steel with batonnage and is then transferred to 225 L and 300 L used oak barrels for 18–24 months. No stabilization, clarification or filtration is carried out.
Aging
Aged for around 18–24 months in used oak barriques after an initial period in stainless steel
