Organoleptic Notes

Straw yellow with greenish hues. Aromas begin with citrus, then peach and tomato leaf, evolving toward more intense, spicy notes with time. On the palate it is fresh and savory, with good structure and a saline, refreshing finish.

Winemaking

Vinification
Cold skin maceration for 12–18 hours, then cold static clarification; fermentation with native yeasts at 18°C for several weeks; followed by maturation on lees for some months.
Aging
Aged in stainless steel for 6 months; suitable for bottle aging for at least 4–5 years.
