Twenty kilometres south of Caltagirone, beside the cork oak woodland of Bosco di Santo Pietro in Sicily, Azienda Agricola Daino grows its roots in a landscape where viticulture has been practiced since ancient times. Founded in 2006 by Gianfranco Daino as a passion project, the estate is guided by a simple philosophy: respect nature’s pace, protect the environment, and honor local culture through organic farming and painstaking care. In the vineyard, bush-trained vines are tended entirely by hand, from moon-timed pruning with traditional tools to natural fertilising and careful ripeness checks, finishing with a one-day hand harvest designed to keep every bunch intact. Working alongside i Vigneri and drawing on the wisdom associated with Salvo Foti, they favor a low-impact, tradition-first approach that aims for healthy grapes, minimal chemicals, and restrained sulphites. Even the finishing touches echo the place, with cork sourced locally from the forest and the hospitality of the winery shared through vineyard visits and tastings, with support from Adriano Mascolo.
