Rooted in Valle del Sarca and the family vineyards along Sarca River, Azienda Agricola Salvetta traces an organic viticultural tradition back to the sixteenth century, then into the early 1930s when Dario Salvetta bought the former Giacomo Sommadossi vineyard lands and set a path his sons Renato Salvetta, Umberto Salvetta, Franco Salvetta, and Giancarlo Salvetta carried forward until 2003. Today, under the name Rauten, their philosophy is a “like it used to be” respect for nature: plowed land, careful hands in the rows, and time to let the wine gain perfume and aroma while resting on its skins. Their vines sit in a sun-facing triangle between the river and Mount Casale at about 250 meters, shaped by the morning Limaro wind and the afternoon Ora from Lake Garda, a sub-Mediterranean microclimate they believe is ideal for slow, even ripening. In the vineyard they returned to organic agriculture (ICEA certification since 2012), reintroduced guyot training with chestnut poles, and favor low yields, with plants rooted in an alluvial basin protected by low dry stone walls. From their home on Via Rauten in Sarche near Trento, the Salvetta family presents their work as a living continuity of place, patience, and tradition.
