Organoleptic Notes

Straw yellow in colour with a fine and lasting perlage; intense bouquet of bread crust and yeast; dry, sapid and well‑balanced.

Vinification

Fermented at 18 °C in stainless steel followed by Metodo Classico fermentation at 14 °C.

Aging

Aged in bottle on its own yeasts for at least 30 months.
