Organoleptic Notes

Garnet red colour; aromas of jam, spices, cherries, dried fruit, tobacco and cocoa; spicy and balsamic on the palate with a long, balanced finish.

Winemaking

Vinification
Gently destemmed and crushed; fermentation in steel at 10–18°C with 4‑week maceration and daily remontage; malolactic fermentation in spring
Aging
Steel until April, then 12 months in 500‑L French oak tonneaux and 7 years in 2,000–2,500‑L Slavonian oak casks; aged a further 12 months in bottle

Estate vineyards in Jago (Negrar in Valpolicella), 240–252 m above sea level

Calcareous soils from marine sediment, not very deep and of average fertility
