Organoleptic Notes

Garnet red colour; fine nose with evolved notes – very rich cherry scents overlay a thick background of chocolate and coffee, with aromatic herbs and light hints of cloves, pepper and ginger; deep, concentrated taste with smooth yet present tannins and lively acidity, offering a well‑balanced progression of power and vitality.

Winemaking

Vinification
Gently destemmed and crushed; fermentation in steel at 10–18°C with a 4–6‑week maceration and daily remontage; malolactic fermentation in spring
Aging
Aged in steel until April, then 12 months in 500‑L French oak tonneaux and 17 years in 1,200–2,500‑L Slavonian oak casks, followed by 12 months in bottle

Estate vineyards in Jago (Negrar in Valpolicella), 240–252 m altitude, east exposure
Soil Composition
Calcareous soils from marine sediment, not very deep and of average fertility

Pergola Veronese (1,800–2,000 vines/ha) and Guyot (3,300–4,000 vines/ha)

80–100 quintals/ha (only the best bunches)
