Organoleptic Notes
Ruby red colour; perfumed nose of sour cherry, raspberry, orange peel and spice alongside volcanic mineral tones; the palate is fresh and savoury with fine tannins and a long, elegant finish.
Winemaking
Vinification
Approximately 30% whole bunches are fermented together with the destemmed grapes in small open tanks; spontaneous fermentation with indigenous yeasts and 10 days of skin contact with daily punch‑downs; malolactic fermentation occurs naturally
Aging
Matured for about 10 months in a mix of new and used French oak barrels and bottled in September 2024
