Organoleptic Notes

Dark ruby with light grainy reflections and brilliant appearance; very intense perfume characterized by maraschino and green tobacco notes with soft violet and mineral nuances; on the palate juicy and smooth with refreshing acidity and very persistent.

Winemaking

Vinification
Fermentation takes place in a particular stainless steel vertical steeper under controlled temperature of 28 °C for about 8 days after pressing and destemming.
Aging
Aged twenty months in large oak barrels of 23 and 50 hectolitres, followed by at least one year of bottle maturation.

Harvest
Manual harvest with the grapes pressed and destemmed immediately after picking.
