Light to medium‑bodied with dried cherries, plums and crushed stones plus hints of spices and orange peel; shows an old‑vine character with notes of mushrooms and bark and ends with a crisp finish.

Spontaneous fermentation in small vats without temperature control for approximately 15–20 days until sugars are exhausted, followed by soft pressing and spontaneous malolactic fermentation
