In the highland town of Mamoiada in Sardinia, the Francesco Cadinu winery officially took shape in October 2015 with Francesco and Simonetta, building on a family craft where “tziu Simone,” Simone Sale, had already carried the tradition forward after buying an old vineyard in the Fittiloghe area back in the 1950s. Today the estate farms about 8 hectares split into eight distinct vineyards, including parcels over 100 years old, still defined by dry stone walls and local plot names passed down by word of mouth. Their philosophy is sustainable and land-respectful, working mainly at around 650 meters above sea level and vinifying each plot separately so each piece of Mamoiada can speak in its own voice. In the cellar, they lean on careful grape selection from the oldest vines and spontaneous fermentation without added yeasts, aiming for authenticity over manipulation, while staying connected to the wider community as members of Mamojà, a group formed to protect and promote the territory through a shared model.
