Deep and brooding with aromas of toasted spices, dark toffee, cedar, ripe plums and blackberries; dense and slightly sweet with earthy coffee and layered dark fruit, spices and chocolate; ends with a dry savoury finish that is long and persistent with spiced tension.

Fermentation in Ganimede tanks with a long maceration phase
Aging
Initially in stainless steel barrels, then in barriques and at least 6 months in bottle (total ageing around 40 months)
