Organoleptic Notes
Straw‑yellow colour with greenish hues and pervasive herby scents of hay, gooseberry and nettle backed by white‑peach hints; the palate is hot and enveloping, well‑balanced and fruity.
Winemaking
Vinification
Cold maceration for 24 hours on the skins before fermentation to extract aromatic substances, followed by gentle pressing; the must ferments at 62 °F in stainless‑steel vats.
Aging
Refined for five months on the lees in steel vats, then given a light fining and filtering and aged for two months in bottle.
