Organoleptic Notes

Ruby red with garnet highlights; nose of blackberry and blackcurrant with vanilla and spices; ripe, soft tannins with good acidity and structure.

Winemaking

Vinification
Destemming and soft pressing followed by fermentation in stainless steel at 16–22°C for 12–14 days with pumping over and delestages; malolactic fermentation in autumn
Aging
Aged in steel until January, then 12 months in 500‑L French tonneaux and six months in bottle
