Harvesting: The grapes are manually harvested the second decade of October
Vinification and Maturing: Fermentation with indigenous yeasts and other microorganism brought from the winery and pressing with wooden press. The temperature of the cellar is controlled naturally by being built semi-inground, through the natural cool and adjusting the volumes of the production.
Refinement: in oak barriques of 225-300 liters for 12 months - used barriques in chestnut and afterward in bottles without filtration.
