Variety: Nerello Mascalese (Negrello), Nerello Cappuccio (Nerello Mantellato)
Provenance: Monte Serra, the volcanic cone at the lowest altitude on the eastern side of Etna, in the town of Viagrande.
Altitude: 1640 feet above sea level.
Climate: High rainfall and humidity with great temperature changes
throughout the day.
Terrain: Sandy, volcanic, rich in minerals with subacid reaction.
Density: 8,000/Hectares.
Yield/ha: 55 quintals/Hectares.
Vine growing: Alberello.
Vinification and maturing: The grapes, harvested at the end of September, are
vinified in red with long maceration of the must with the skins in 52
hectoliters oak cask. After malolactic fermentation, the wine is transferred
in small casks (225 liters) where it matures for more than one year.
Refining: in bottles for at least 12 months.
Alcohol content: 13.5%
Organoleptic characteristics: Vivid red ruby color. Ethereal bouquet, intense, with hints of wild berries, peach and noble wood. The taste is full, harmonic,
considerably persistent and reasonably tannic.
Serve with: Pairs with wild fowl, meat and sauces even elaborated, and mature cheese.
Serving temperature: 64-68°F, in glasses suitable for red bodied wines.
