Training System: Espalier.
Density: 1,500/hectare.
Yield: 55 quintals/Hectare.
Harvesting: The grapes are manually harvested the third week of September.
Vinification and Maturing: Fermentation with indigenous yeasts (and other microorganism found in the grapes). Pressing with wooden press. Winery is semi-inground, the temperature is not controlled but regulated naturally through the cool of the cellar.
Maceration on skins for 12 days.
Refinement: in stainless steel tanks that have been feremented "sur lies". Not filtered.
