Harvesting period: Second week of October.
Winemaking: Field-blend, macerated for 10 days, in steel and wood, with manual punchdowns. Aging for 6 months in steel, 10 months in used Tonneau of 500 and 700 lt
Organoleptic characteristics: Austere, intense and impenetrable ruby red color, characterized by glorious purplish reflections, typical of muristellu. The intense aromas recall that of small berries , such as currant and blueberry, black cherries and a memory of plums. On the nose herbaceous nuances of Mediterranean scrub and balsamic sensations, softened by the sober spiciness given by the aging in wood.In the mouth is dry, intense and persistent with a good tannic texture, softness and freshness.
Pairing: Bagadiu is a wine of great structure and personality , which requires structured, intense and persistent dishes. The obvious pairing is with meat dishes, from the most ordinary ones such as sliced balsamic vinegar to more intense dishes such as roast or stewed game .
