Vinification and Maturing: the manual harvesting is at the end of October.
Maceration in contact with peels for about 15 days at a controlled
temperature with a complete natural malolactic fermentation.
Refinement: in steel vats for 30/36 months and at least 6 months in bottles.
Not performing filtration to not lose its typical characteristics.
Alcohol: 14.5%
Organoleptic characteristics: deep ruby red color. Intense aromas of red berries and spices. Full flavor, the alcoholic note is supported by the evident tannins and a nice acidity that leaves a pleasant freshness in the mouth.
Serve with: roasted meat, fatty and structured plates.
