Harvesting: Grapes are harvested by hand at the end of August.
Vinification and Maturing: Cold maceration for 18 hours, mild cold pressing, in barrel fermentation. Matured for at least 3 months in barrels.
Organoleptic characteristics: dry, with an intense aromatic hue. Flavorful,
with minerality and persistence. Aromas of fresh fruit with an intense
pale yellow.
Serve with: seafood and herbed cheeses.
