Grape Variety: Bovale Sardo (Muristellu), Cannonau and Monica.
Provenance: Vineyards situated in the municipal territory of Atzara, a hilly area west of Gennargentu mountains.
Altitude: 550m a.s.l.
Soil: Medium-textured decayed granite tanding to sandy, worked over the years with traditional technologies.
Training System: Goblets.
Density: 6,000 vines/Hectare.
Yield: 40 quintals/Hectare.
Age of vineyard: 70 -80 years old
Harvesting period: Second week of October.
Vinification: Grapes are mixed and vinified. Fermentation takes place at controlled temperature with a skin maceration of about 18-20 days. Maturation 10 months in steel, 12 months in 50hl tonneaux barrels and 6 months in casks.
Refining for 6 months in bottles.
Organoleptic characteristics: Ruby red color with pomegranate glints. It is a wine full of character, warm and full-bodied palate, inklings of vanilla and spices, expressing great elegance and marked finesse. The tannins are juicy and silky with a very long finish.
Serve with: All meat dishes and ripe cheeses.
