Sator Riserva Tintilia del Molise DOC
Grape Variety: 100% Tintilia.
Provenance: Acquaviva Collecroce, (Campobasso).
Altitude: 1640 feet above sea level.
Exposure: South with excellent ventilation, low humidity.
Soil: clay-calcareous lands, on hill.
Training system: espalier, spurred cordon
Density: 4.000 vines/Hectare
Yield: 50 quintals/Hectare.
Vinification and Maturing: the manual harvesting is at the end of October.
Maceration in contact with peels for about 15-20 days at a controlled
temperature with a complete natural malolactic fermentation.
Refining in steel vats for 30 months and 6 months in French casks before
bottling. Not performing filtration to not lose its typical characteristics.
Alcohol: 15%.
Organoleptic characteristics: deep red color. Intense, persistent, complex bouquet, from ripe fruit to jam, with light spicy and toasted notes.
Full and enveloping flavor, the important alcoholic note is well supported by
the elegant tannins.
Serve with: structured plates, aged cheeses.
