Vinification and Maturing: The vinification process is carried out separately for each variety; the tumultuous fermentation is realized at a controlled temperature (25˚/30˚C) with a variable number of "déléstages" to optimize the maceration. Follows the malo-lactic fermentation. The aging process begins with maturation in oak barriques for about 1 year, followed by lengthy refinement in the bottle for at least another year.

Organoleptic characteristics: dark ruby red color. Very intense scents of black currant and other small fruits, toasted oak and spices; fresh to start with followed by supple sensations. Great tannic structure, ending with liquorice. Very long persistence.
