Variety: 100% Nerello Cappuccio (Mantellato)
Provenance: Southwest slope of Mount Etna
Altitude: 2296 ft.asl
Climate: high rainfall and humidity with great temperature changes throughtout the day.
Terrain: Sandy, volcanic, rich in minerals with subacid reaction.
Density: 6,500/Hectare
Yield/ha: 70 quintals/Hectare
Vine growing: Spurred cordon system
Age of vineyard: 10-30 years.
Vinification and maturing: the grapes, harvested after mid October, are softly pressed. Fermentation occurs at a controlled temperature of 25 C in stainless steel vats, with a 20-21 days long maceration, using patented selected indigenous yeasts. The maturation that occurs in stainless steel tanks for about 22 months until bottling.
Refining: in bottles for approximately 6 months.
Alcohol content: 13-13.5%
Organoleptic characteristics: Bright ruby red with very light tints of purple. Scent of delicate red fruit. It tastes dry, nice acidity, a bit tannic, balanced, good persistence with red fruit aroma.
Serve with: Red and white meats, cheeses, cooked fish-based recipes by the glass occasions.
