Vinification and Maturing: The grapes fully stemmed are placed in maceration in stainless steel for a few days at controlled temperature of 10˚C. Spontaneous fermentation for 15 days. After racking the wine is matured in acacia tonneau for 10 months, where malolactic fermentation happens spontaneously. Refinement in bottles for 3 months.
